My client wants a field where users adding an item can enter tags in a youtube style format which will be clickable on the review page as search keywords.  Would it be possible for me to go in and add that or does the ioncube encoding make it impossible to hack jReviews?

The encoding doesn't restrict you from customizing the functionality of jReviews. In fact, I've posted many examples of how to override the configuration settings in the frontend if necessary.

What you are describing seems to be very similar to what jReviews already offers and they are called click2add and click2search. You can very well modify these two to meet your requirements.
