Is there a maximum of option fields you can add with custom fields? On my testdb (jsas on a usb stick) I have about 5.000 options for my field "label". My site hangs if i add an item in the frontend.
No empty fields are showed to fill-in the data.

Any ideas?

There's no hard-coded limitation as you've noticed, but right now because of the way the fields are implemented through patTemplate, the performance degrades with large number of options. This will not happen with the upcoming version, at least not because of patTemplate.

After I release jReviews 2.0, I might try to find a way to overcome this for jReviews 1.2.x.
