I'm trying to figure out the difference between the basic script and the different addons.

Primarily, what I'm curious about is how I have seen some sites list the listings in alphabeticle order.. is that just a way they edited their layout? or is there a special version that enables that?

also I noticed in the demo version, there seems to be two versions of it.. the one with ioncube, and one that lists zend.. whats the difference? When I installed the demo version, I was only able to get the zend version to sucesfully work.. will that pose a problem if I were the purchase the full version, such as loss of features?

Zend and ionCube are just 2 different methods of encoding and there's no difference in features. Many hosts already support running of Zend encoded files, so it makes it a lot easier for users to get jReviews running and that is why now the Zend version is also available.

With regards to ordering, you can select which default ordering to use for lists in Config Settings, Item s List tab.

For a description of the jReviewsEverywhere addon, please read the guide here. You don't need this to take full advantage of jReviews. Only if you want to add reviewing capabilities to other components.
